What are the newest food trucks at General Duffy’s Waterhole?

Although I haven’t been there in awhile {and I really NEED to go there soon, because their new trucks sound REALLY good!}, they have some fun new choices for all types of palettes. Seriously.

Love Italian food? Have you wondered if there are Italian food trucks in Central Oregon? I am happy to say YES! Now there is another place in the Bend/Redmond area that serves Italian food. This one is called

I have a thing for food trucks. Food carts. Whatever they are called, I am fascinated. I used to watch The Great Food Truck Race and I think that is what got me so excited about food trucks. There are several food truck places in Central Oregon. I told you about The Bite in Tumalo before, but today I wanted to share with you a new food truck lot in Redmond, OR. – General Duffy’s Waterhole food trucks.

My husband and decided to stop in and give this new spot a try. We had been running errands all morning and we were tired and hungry (maybe even “hangry”, “hitchy”, “hannoying” – I made up the latter two!), and ready for a bite to eat.

General Duffy’s Waterhole is conveniently located in downtown Redmond, Oregon. It may be a little hard to find, as it is tucked in a back corner. It doesn’t have a parking lot, but there is plenty of street parking available.  There are several food trucks to choose from:

My husband loves a good burger, so he settled on the Boss Hogg Bacon Cheeseburger from Curbside Bacon. It was a gigantic burger with all the fixins’. He said the burger was pretty good, but nothing really out of the ordinary. He said the bacon was VERY good and full of flavor. He feels that the burgers from the Rogue Chef at the Bite in Tumalo, or the massive burgers from Food Fellas at Wild Ride are a bit better.

Since I love German food, especially schnitzel, I could not resist getting one of the daily specials – the Snittzle sandwich. I was very impressed with how tender the porch chop was. They definitely used quality meat! It was lightly breaded, and came with havarti cheese, grilled onions and dijon mustard. It was quite filling, and I was very satisfied.

That Guy’s Bistro

That Guy’s Bistro offers several “Filly” sandwiches that look mouthwatering. They also have flatbread pizzas and a “Diggity Dog” which is a 1/4 lb beef frank wrapped in flatbread with provolone cheese and house made aioli. I will definitely have to try something from here the next time we visit!


Since we got lunch from Curbside Bacon, we decided to try something from That Guy’s Bistro for dessert. When I saw Cinnamon Fry Bread on their menu, I just knew I had to have it! It was quite tasty with light and airy fry bread sprinkled with generous amounts of cinnamon and sugar. It came with a sweet cream cheese dip. It was the perfect way to finish off lunch.

Budo Bowls

We didn’t try anything from Budo Bowls, but they serve 100% plant based foods. They have a nice selection of bowls, including the General Tso bowl {Edamame “chicken” General Tso sauce, sweet peppers and onions over a bed of rice. They have plenty of other entrees too. Their menu does change daily, you may not find these items on their menu when you go.

Taino – UPDATED – unfortunately Taino food cart in Redmond, OR is no longer around. Their website isn’t working either.

Taino…a taste of Puerto Rico. This food truck looked very good – they had several traditional Puerto Rican goodies on their menu. I can’t wait to try the Papas Locas {Crazy Fries}. Other menu items include empanadas, fried green plantains, fried sweet plantains, fried yucca and Coconut FlanTaino is definitely on our list to try next time!

Senior C’s Street Tacos

I really want to try this place too. They have a huge menu full of amazing looking tacos and other dishes. If you like fish, they have a wild Alaskan Cod Fish Tacos. If fish isn’t your thing, they have plenty of other options.

Little Makana

Little Makana has shaved ice {one of my favorite things}. This is another cart I need to try next time. We were quite full after our lunch, and I resisted the urge to get a shaved ice. My mouth was watering with their huge selection of flavors. I was also pleased to see that they have cotton candy {I am a cotton candy fiend!}. You guessed it – I will be getting Cotton Candy next time too! This truck is going to be BUSY this summer. It’s the perfect cool & refreshing dessert on those hot summer days in the high desert!

Unfortunately the day I visited General Duffy’s Waterhole, I didn’t go in the building where the beer, ciders, etc. are, so I cannot tell you what it was like aesthetically. They do offer 20+ beers on tap from local microbreweries, as well as kombucha, CBD beverages, root beer and various ciders on tap.

One really neat thing that General Duffy’s Waterhole offers is Saturday Markets where they feature over 20 local vendors. So you can shop, eat and drink each Saturday during Summer! The marketplace runs from 10:00 am to 4:00 pm every Saturday through August 31st.
